  • 1 pint strawberries, hulled and diced
  • 3 tablespoons fresh basil, julienned, plus more for garnish
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons balsamic vinegar
  • 1 baguette, sliced into ½” pieces
  • 2 tablespoons olive oil, or avocado oil
  • Kosher salt, to taste
  • 1 cup ricotta cheese
  • 2 tablespoons honey
  • Balsamic glaze, to taste (optional)

Instructions

  1. Combine the sliced strawberries, basil, olive oil, and balsamic vinegar in a bowl. Set aside to marinate for 10-15 minutes.
  2. Preheat the oven to 375°F. Slice the baguette into ½-inch slices and place them on a baking sheet. Brush with olive oil and sprinkle with kosher salt.
  3. Bake the crostini for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  4. While the crostini bakes, whisk the ricotta cheese and honey together until smooth and creamy.
  5. Once the crostini has cooled slightly, spread a layer of honey-whipped ricotta on each piece.
  6. Top each crostini with a generous spoonful of the marinated strawberries, and garnish with additional fresh basil and balsamic glaze, if desired.
  7. Serve immediately and enjoy!

Notes

  • You can prepare the crostini and whipped ricotta ahead of time (up to 24 hours), but assemble the bruschetta just before serving.
  • Use the ripest strawberries for the best flavor.
  • For a gluten-free option, use gluten-free bread instead of a baguette.
