Description

Stewed Rhubarb is a simple sweet-tart fruit compote made with fresh rhubarb, sugar, water, and optional citrus flavoring. This easy recipe creates a soft, spoonable topping perfect for yogurt, oatmeal, pancakes, desserts, or baked treats.


Ingredients

  • 500 g fresh rhubarb stalks, chopped into small pieces
  • 100 g granulated sugar
  • 60 ml water
  • 1 tbsp lime juice (optional)
  • 1 tsp lime zest (optional)
  • 1 tsp vanilla extract (optional)
  • 1/4 tsp ground cinnamon (optional)

Instructions

  1. Wash the rhubarb thoroughly and remove leaves and damaged ends. Chop into small even pieces.
  2. Add the chopped rhubarb, granulated sugar, and water into a medium saucepan. Stir in lime juice, lime zest, vanilla extract, and cinnamon if using.
  3. Place the saucepan over low to medium heat and gently stir to combine the ingredients.
  4. Allow the mixture to simmer for 12–15 minutes, stirring occasionally to prevent sticking.
  5. Cook until the rhubarb softens and breaks down into a thick, spoonable consistency. For chunkier stewed rhubarb, reduce cooking time slightly.
  6. Taste and adjust sweetness if needed by adding extra sugar or sweetener.
  7. Remove from heat and allow to cool slightly before serving warm or chilled.

  • Use fresh, firm rhubarb stalks for the best texture and flavor.
  • Adjust sugar depending on how tart the rhubarb tastes.
  • Frozen rhubarb can be used but may require a slightly longer cooking time.
