Instructions

  1. In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
  2. In a separate large bowl, beat the softened butter and brown sugar together until light and fluffy, about 2-3 minutes.
  3. Add the egg, molasses, and vanilla extract to the butter-sugar mixture. Beat until well combined.
  4. Gradually add the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Cover the dough with plastic wrap and refrigerate for at least 2 hours or overnight.
  6. Preheat the oven to 350°F (180°C). Line baking sheets with parchment paper or silicone mats.
  7. Scoop tablespoon-sized portions of dough using a cookie scoop and roll them into balls. Coat each ball generously with powdered sugar.
  8. Place the powdered sugar-coated dough balls about 2 inches apart on the prepared baking sheets.
  9. Bake for 10-12 minutes, or until the cookies have spread and formed deep cracks. The edges should be firm, while the centers remain soft.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
