- Add the egg, molasses, and vanilla extract to the butter-sugar mixture. Beat until well combined.
- Gradually add the dry ingredients and mix until just combined. Be careful not to overmix.
- Cover the dough with plastic wrap and refrigerate for at least 2 hours or overnight.
- Preheat the oven to 350°F (180°C). Line baking sheets with parchment paper or silicone mats.
- Scoop tablespoon-sized portions of dough using a cookie scoop and roll them into balls. Coat each ball generously with powdered sugar.
- Place the powdered sugar-coated dough balls about 2 inches apart on the prepared baking sheets.
- Bake for 10-12 minutes, or until the cookies have spread and formed deep cracks. The edges should be firm, while the centers remain soft.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
