  • ¼ cup all-purpose flour

  • 3 tablespoons cold butter, divided
  • 2 cups yellow onions, diced
  • 4 cloves garlic, minced
  • 1 cup red wine (cabernet sauvignon or merlot)
  • 4 cups beef broth
  • 2 beef bouillon cubes
  • 2 tablespoons Worcestershire sauce
  • 3 tablespoons tomato paste
  • 5 medium carrots, cut into 1-inch chunks
  • 1 pound baby Yukon gold potatoes, halved or quartered
  • 2 bay leaves
  • 1 sprig fresh rosemary
  • 1 cup frozen peas
  • ¼ cup cold water + 3 tablespoons cornstarch (optional, for thickening)
  • 23 drops Gravy Master (optional, for color and richness)

Instructions

  1. Cut beef into 1-inch cubes, trimming excess fat. Season with black pepper, garlic salt, and celery salt, then toss with flour until evenly coated.
  2. Heat 3 tablespoons of olive oil in a skillet over medium-high heat. Sear the beef in batches for about 45 seconds per side, adding oil as needed. Transfer browned meat to the slow cooker.
  3. Reduce heat to medium. Melt 1 tablespoon of butter in the same skillet, then add onions and cook for 5 minutes until softened. Add garlic and cook for 1 minute more.
  4. Pour in the red wine, scraping the bottom of the skillet to loosen browned bits. Transfer the mixture, including liquid, to the slow cooker.
  5. Add beef broth, bouillon cubes, Worcestershire sauce, tomato paste, carrots, potatoes, bay leaves, and rosemary. Stir to combine.
  6. Cover and cook on low for 8 hours or high for 4 hours, until beef is tender and vegetables are fork-soft.
  7. During the last 15 minutes, add frozen peas. If you want a thicker stew, mix cornstarch with cold water and stir it in gradually until desired consistency is reached.
  8. Remove bay leaves and rosemary stem. Turn off the slow cooker and swirl in 2 tablespoons of cold butter for a glossy, velvety finish. Add a few drops of Gravy Master if desired for deeper color.
  9. Serve hot with fresh bread, biscuits, or mashed potatoes.
