Description

Ingredients

  • 1 cup pistachios (finely ground)
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter (softened)
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 cup sour cream
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup frozen raspberries
  • 1 cup powdered sugar (for buttercream)
  • 2 tbsp freeze-dried raspberry powder (for buttercream)
  • 1/4 cup milk (for buttercream)
  • 1 tbsp lemon juice (for jam)
  • 1 tsp vanilla extract (for jam)

Instructions

  1. Preheat the oven to 340°F (170°C). Line three 8-inch round cake pans with parchment paper.
  2. In a food processor, finely grind the pistachios. Sift together the pistachio flour, all-purpose flour, baking powder, baking soda, and salt.
  3. In a stand mixer, beat the butter and sugar on high for 3 minutes until light and fluffy.
  4. Add eggs, one at a time, mixing until fully incorporated.
  5. Add half of the dry ingredients to the mixer, followed by the sour cream, oil, and vanilla extract. Mix until smooth.
  6. Gradually add the remaining dry ingredients, mixing until just combined.
  7. Divide the batter evenly among the prepared pans and bake for 20-23 minutes, or until a toothpick comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  8. To make the raspberry jam, combine raspberries, sugar, vanilla extract, and lemon juice in a saucepan. Cook over medium heat, stirring occasionally until the mixture thickens (about 8 minutes). Let it cool in the fridge.
  9. For the buttercream, whip the butter in a stand mixer until smooth. Gradually add powdered sugar and raspberry powder. Add milk and vanilla extract, mixing until fluffy.
  10. Assemble the cake: Spread raspberry jam on the first layer of the cake, followed by a layer of buttercream. Repeat for the remaining layers.
  11. Frost the top and sides of the cake with the remaining buttercream. Decorate with extra raspberries and chopped pistachios, if desired.

Notes

  • Use room temperature butter and eggs for a smoother batter.
  • If you can’t find freeze-dried raspberry powder, substitute with more raspberry jam.
  • To prevent the cake from becoming too dense, do not overmix the batter.
  • Feel free to use a store-bought raspberry jam if you prefer a quicker option.
