- 3 medium-sized fresh peaches (peeled, pitted, and chopped, approximately 2 cups)
- ¼ cup granulated sugar
- 2 cups heavy cream
- 1 cup milk
- ¾ cup granulated sugar
- ¼ teaspoon salt
- 4 egg yolks
- 1 teaspoon pure vanilla extract
Instructions
- Peel and chop the peaches into small cubes. Add ¼ cup sugar and stir. Let sit for at least 1 hour to macerate.
- Once peaches have released their juices, place them in a food processor and pulse 3-4 times until broken into small chunks.
- In a saucepan, heat the heavy cream, milk, ¾ cup sugar, and salt over medium heat until the sugar dissolves (about 3-4 minutes).
- In a separate bowl, whisk the egg yolks until smooth and lightened in color.
- Slowly pour ½ cup of the heated cream mixture into the egg yolks, whisking constantly to temper them.
- Pour the egg mixture back into the remaining cream, stir, and heat over medium heat for 5-8 minutes, until the mixture thickens slightly and coats the back of a spoon (temperature should reach 175-185°F).
- Pour the custard through a fine strainer into a bowl to remove any bits of egg.
- Stir in the peaches and their juices, then cover and refrigerate the mixture until completely cooled (at least 4 hours or overnight).
- Pour the chilled custard into an ice cream maker and churn for 20-25 minutes until it thickens.
- Transfer the ice cream to a freezer-safe container and freeze for at least 2 hours before serving.
Notes
- Use the best fresh peaches available for optimal flavor. Frozen peaches can also be used if fresh ones aren’t available.
- Ensure the custard is thoroughly chilled before churning to achieve the best texture.
- Your ice cream maker’s bowl should be fully frozen before use (at least 12 hours).
- If the ice cream becomes too hard in the freezer, let it sit at room temperature for 5-10 minutes to soften before scooping.
