Description

Ingredients

  • 1 lb chicken breast, cut into cubes
  • 1 cup pineapple chunks
  • 1 red bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp lime juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cut the chicken breasts into cubes of equal size for even cooking.
  2. Whisk together soy sauce, honey, lime juice, garlic, olive oil, and salt in a bowl.
  3. Marinate the chicken in the sauce for at least 30 minutes, or overnight for best flavor.
  4. Prepare vegetables and pineapple by cutting them into bite-sized chunks.
  5. Preheat the oven to 425°F or the air fryer to 400°F.
  6. Thread the chicken, pineapple, bell peppers, and onions onto skewers, alternating ingredients.
  7. If grilling, brush the kabobs with oil to prevent sticking. For oven or air fryer, spray lightly with cooking spray.
  8. Cook the kabobs in the air fryer for 10-12 minutes, or bake in the oven for 20-25 minutes, turning halfway through.
  9. Check doneness by ensuring the chicken reaches an internal temperature of 165°F.
  10. Remove the kabobs and let them rest for a few minutes before serving.
