  • 1 jalapeno, seeded and minced: mild heat and depth
  • 1/3 cup cilantro, chopped: fresh herbal brightness
  • 1 large garlic clove, minced: aromatic richness
  • 1 lime, zested and juiced: citrusy zing that enhances all flavors
  • 3/4 tsp kosher salt: enhances overall flavor
  • 1/2 tsp black pepper: subtle spice to balance acidity
  • Blue corn tortilla chips: for dipping and spooky presentation

Instructions

  1. Rinse the black beans under cold water and drain well. Transfer to a large mixing bowl.
  2. Drain the Ro-Tel and add to the beans.
  3. Chop the red onion, bell pepper, jalapeno, cilantro, and garlic. Add to the bowl.
  4. Zest and juice the lime into the mixture.
