Description

This grilled chicken marinade combines pantry staples like soy sauce, balsamic vinegar, lemon juice, Dijon mustard, and spices to create a juicy, flavorful chicken every time. Ideal for grilling, baking, or pan-searing, it’s versatile, easy to prepare, and perfect for meal prep or entertaining.

Ingredients

Scale
  • 1 1/2 pounds boneless skinless chicken breasts or thighs: protein base that absorbs flavor
  • 1/3 cup olive oil: adds moisture and distributes seasonings
  • 3 tablespoons lemon juice: brightens and tenderizes
  • 2 tablespoons reduced sodium soy sauce: adds umami and salt balance
  • 2 tablespoons balsamic vinegar: provides tangy-sweet depth
  • 2 tablespoons brown sugar: balances acidity and aids caramelization
  • 1 tablespoon Dijon mustard: adds tangy complexity
  • 1 1/2 tsp onion powder: adds aromatic depth
  • 1 1/2 tsp garlic powder: boosts savory notes
  • 1 1/2 tsp salt: essential for enhancing flavor
  • 1 tsp dried basil: adds herbaceous flavor
  • 1 tsp dried oregano: brings earthy notes
  • 1 tsp dried thyme: adds freshness and balance
  • 1 tsp paprika: gives color and warmth
  • 1/2 tsp black pepper: adds mild heat
  • 1/2 tsp red pepper flakes: brings a gentle spicy kick

Instructions

  1. Pound chicken to an even thickness using a mallet or rolling pin.
  2. In a large bowl or zip-top bag, whisk together olive oil, lemon juice, soy sauce, balsamic vinegar, brown sugar, Dijon mustard, and all seasonings.
  3. Add the chicken to the marinade, seal, and turn to coat evenly.
  4. Marinate in the refrigerator for at least 4 hours or up to 12 hours for best flavor.
  5. When ready to cook, let the chicken sit at room temperature for 15–30 minutes.
  6. Preheat grill to 400°F, clean and oil grates.
  7. Grill chicken for 5–7 minutes per side or until internal temperature reaches 165°F.
  8. Let chicken rest for 5 minutes before slicing or serving.

Notes

  • Do not marinate chicken longer than 12 hours to avoid tough texture.
  • Use a meat thermometer to ensure proper doneness.
  • Reserve some marinade before adding raw chicken if you plan to use it as a sauce or for veggies.
  • This marinade also works well for chicken wings, drumsticks, and tenderloins.
  • You can freeze chicken in the marinade for up to 3 months.
