- 1 cup (136g) all-purpose flour
- 1 teaspoon (5g) baking powder
- Large pinch of sea salt
- 2 large eggs
- 3/4 cup (150g) granulated sugar, plus more for finishing
- 3 tablespoons (44g) bourbon or rum (optional)
- 1 teaspoon (13g) pure vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan with butter or baking spray.
- Melt the butter and set it aside to cool slightly.
- Cut the nectarines into 1/2 inch pieces (peeling is optional). If using apples, peel them first.
- Whisk the eggs until frothy and lighter in color, then add sugar and whisk until fully incorporated.
- Mix in the bourbon or rum (optional) and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the melted butter. Mix gently.
- Fold in the chopped nectarines, ensuring they’re evenly distributed.
- Pour the batter into the prepared pan, spreading it evenly. Sprinkle a few pinches of sugar on top.
- Bake for 50-60 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. Let it cool completely before serving.
