Instructions
- Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- Trim the ends of Brussels sprouts, remove any yellowed outer leaves, and cut them in half lengthwise.
- In a large bowl, toss the halved Brussels sprouts with olive oil, minced garlic, salt, and pepper until evenly coated.
- Arrange Brussels sprouts cut-side down on the prepared baking sheet in a single layer.
- Roast for 15-20 minutes until the cut sides are golden brown and the edges are crispy.
- Remove from the oven, sprinkle with grated Parmesan cheese, and return to the oven for another 3-5 minutes until the cheese melts and becomes golden.
- Garnish with freshly chopped parsley and serve immediately.
