Description

Creamy Chicken Stroganoff is a rich, comforting dish made with tender chicken, earthy mushrooms, and a tangy sour cream sauce. Ready in just 30 minutes, it’s perfect for cozy dinners and quick weeknight meals.

Ingredients

Scale
  • 2 chicken breasts: cut into bite-sized pieces
  • 1/2 teaspoon garlic powder: adds savory depth to the chicken
  • Salt & pepper to taste: enhances overall flavor
  • Flour for dredging: creates a light crust on the chicken and helps thicken the sauce
  • 3 tablespoons olive oil (divided): used for sautéing and searing
  • 1 tablespoon butter: adds richness to the mushrooms and onions
  • 8 ounces cremini mushrooms (sliced): provide earthy, meaty flavor
  • 1/2 medium onion (chopped): offers sweetness and aromatic base
  • 1 tablespoon Dijon mustard: delivers tangy sharpness
  • 1 tablespoon Worcestershire sauce: gives umami depth
  • 3 cloves garlic (minced): aromatic and flavor enhancer
  • 2/3 cup chicken broth: builds the savory sauce base
  • 1/2 cup full-fat sour cream: creates creamy texture and signature tang

Instructions

  1. Cut chicken into bite-sized pieces. Season with garlic powder, salt, and pepper. Dredge in flour.
  2. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Cook the chicken in two batches, searing each side for about 3 minutes until golden and cooked through. Set aside.
  3. Add butter to the same skillet. Once melted, add mushrooms and onions. Sauté for 6–8 minutes until moisture evaporates and everything is browned.
  4. Stir in Dijon mustard, Worcestershire sauce, and minced garlic. Cook for 1 minute.
  5. Pour in chicken broth and scrape up any browned bits. Return chicken to the skillet and cook for 2 minutes, stirring occasionally.
  6. Gently stir in sour cream and heat through for about 1 minute. Do not boil. Adjust seasoning with salt and pepper if needed.
  7. Serve hot over egg noodles, mashed potatoes, or rice.

Notes

  • Use a hot pan to get a proper sear on chicken and mushrooms.
  • Avoid overcrowding the skillet to ensure even browning.
  • Don’t let the sour cream boil to prevent curdling.
  • Store leftovers in an airtight container in the fridge for 3–4 days. Reheat gently over low heat.
  • Full-fat sour cream is recommended for best texture and flavor.
