Ingredients
Scale
- 2 medium zucchinis, shredded: provides moisture and mild vegetable flavor
- 1/2 cup breadcrumbs: adds crunch and binds the fritters
- 1 large egg: acts as a binder
- 1/2 cup shredded cheddar cheese: adds creamy, savory flavor
- 1/4 cup finely chopped onion: enhances sweetness and depth
- 1/2 tsp garlic powder: adds aromatic flavor
- 1/4 tsp salt: enhances overall taste
- 1/4 tsp black pepper: adds subtle spice
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Shred the zucchinis and place them in a clean kitchen towel. Squeeze out excess moisture to prevent soggy fritters.
- In a large bowl, combine shredded zucchini, breadcrumbs, egg, shredded cheese, finely chopped onion, garlic powder, salt, and pepper. Mix until evenly incorporated.
- Scoop heaping tablespoon-sized portions of the mixture onto the prepared baking sheet and lightly press to form small fritters.
- Bake in the preheated oven for 18–22 minutes or until edges are golden brown and crisp.
- Remove from the oven and let the fritters cool slightly before serving for the best texture.
Notes
- Ensure zucchini is well-drained to avoid soggy fritters.
- Finely chop onions to maintain smooth texture.
- For extra crispiness, use panko breadcrumbs.
- Reheat in the oven at 350°F for 5 minutes or microwave for 15–20 seconds.
- Optional: Add herbs like parsley or chives for extra flavor.
