Ingredients
- Vanilla Wafers (10-12 wafers): Provides a sweet, crumbly base
- Butter (1/4 cup or 4 tbsp): Helps bind the crust together and adds richness
- Sugar (1/4 cup): Sweetens the crust and mousse
- Salted Caramel Sauce (1/2 cup): Adds a rich, creamy flavor to the mousse
- Whipped Cream (1 cup): Gives the mousse a light, fluffy texture
- Powdered Sugar (1/4 cup): Sweetens the mousse
- Apples (2 medium, peeled and chopped): Provides a tart contrast to the sweet mousse
- Cinnamon (1 tsp): Adds warmth and spice to the apples
Instructions
- Crush the vanilla wafers and combine with melted butter and sugar. Press into the bottom of each dessert cup and chill in the fridge.
- In a bowl, whisk whipped cream, caramel sauce, and a pinch of salt. Fold in powdered sugar until smooth.
- Cook the apples in a skillet with cinnamon and sugar until soft and caramelized. Let them cool.
- Once the crust has set, spoon a layer of caramel mousse into each cup, followed by the cinnamon apples. Repeat the layers and top with mousse.
- Refrigerate the dessert cups for at least two hours to set. Serve chilled.
Notes
- Let the mousse chill for at least two hours to achieve the right texture.
- Don’t overcook the apples, they should be soft but still have texture.
- These cups can be made the day before to save time and allow the flavors to meld.
