  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 8 oz medium egg noodles
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly spray a 9×13-inch casserole dish with cooking spray.
  2. Bring a large pot of salted water to a boil. Cook the egg noodles according to the package instructions until just al dente. Drain and return the noodles to the pot. Stir in the sour cream until well-coated.
  3. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  4. Stir in the diced tomatoes (with juice), Rotel tomatoes, tomato paste, salt, pepper, onion powder, and garlic powder. Let the mixture simmer on low heat for about 10 minutes, allowing the flavors to meld together.
  5. Spread the sour cream-coated noodles evenly across the bottom of the prepared casserole dish. Spoon the beef sauce mixture over the noodles.
  6. In a separate bowl, combine the shredded cheddar, Parmesan, and mozzarella cheeses. Sprinkle the cheese mixture evenly over the casserole.
  7. Cover the casserole with foil and bake for 25-30 minutes, or until the casserole is bubbling. Remove the foil and bake for an additional 5-10 minutes to allow the cheese to turn golden brown.
