  • 3 cups rolled oats

Instructions

  1. Place butter, sugar, and diced apples in a medium frying pan. Cook over medium-high heat, stirring occasionally, until tender and golden. Remove from heat and cool on a paper towel.
  2. In a medium bowl, whisk together the flour, cinnamon, baking soda, and salt. Set aside.
  3. In a stand mixer, beat butter and sugars on medium-high until light and fluffy, about 3 minutes.
  4. Add eggs one at a time, fully incorporating after each addition. Beat for 1 minute, then add vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture on low speed, mixing until combined. Stir in the oats.
  6. Fold in the caramelized apples and mix until just combined.
  7. Refrigerate the dough for at least an hour.
  8. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  9. Use a cookie scoop to place dough balls on the baking sheet, spacing them 2 inches apart.
  10. Bake for 12-15 minutes or until the edges are golden but the center is still soft.
  11. Allow cookies to cool for 5 minutes on the baking sheet, then transfer to a cooling rack. Drizzle with a sugar glaze once cooled.
